So long as the body is not banged up the pieces can easily be repainted and used to replace damaged ones on another car.
Some car thieves steal-to-order looking for cars with the piece(s) they want in good condition.

Once in a while the thieves do get caught. About 30 years ago my girlfriend at the time heard some noise outside my parents house. We looked out the window and saw someone attempting to break into my aunt's 1963 Chevy pickup I had borrowed. I grabbed a large chefs knife from the kitchen and went outside and from behind I grabbed the guy and threw him to the ground while my girlfriend called the police. He kept repeating "don't kill me" while I kneeled on him and held the knife to his throat until the police arrived and took him away.
