I purposely made macadamia nut butter with a food processor and blended in some soft butter. It's great with all sorts of fish. On a grill, I cook one side till it's ready to flip. After I flip it, I put a pat of the nut butter on it and when it melts and drizzles over, it's ready to plate up. Another way is to smear both sides of the fish and grill over high heat. It browns very nicely and has a crunchy nutty crust.
